Warm a large pot over medium-high heat. Melt butter and add onion and carrots. Cook about 3 minutes, then add garlic and cook for 30 seconds.
Add in the chicken, salt and pepper, and cook for 3 minutes, stirring occasionally. Don’t worry about the chicken being cooked through.
