KEY INGREDIENTS

Warm a large pot over medium-high heat. Melt butter and add onion and carrots. Cook about 3 minutes, then add garlic and cook for 30 seconds.

Add in the chicken, salt and pepper, and cook for 3 minutes, stirring occasionally. Don’t worry about the chicken being cooked through.

Sprinkle flour over the chicken and veggies, stir to coat and continue cooking 2 to 3 minutes. Add stock, half-and-half and red pepper flakes. Continue cooking until the soup thickens.

Add the tortellini to the pot and cook until al dente. Remove from the heat and stir in cheese. Once melted, add more. Slowly melting the cheese will give the soup a smooth consistency.
