Mastering the Art of The Perfect Pie Crust

Done and done!  The course is absolutely amazing, it was taught by Evan Kleiman; an instructor with a plethora of experience on the subject.  I learned things that I didn’t realize I wanted or needed to know.  She offered different ways to approach each step, optional recipe changes and different tools you will need to complete the task.

What really excited me what learning “the why”.   Having an instructor with this much knowledge really thrilled me.  The course is set up in 7 lessons and each lesson teaches a different part of the Perfect Pie Crust.  Creating the dough was packed with information on different ingredients that can be used depending on the outcome you are looking for.

If you know me, you know I am a butter lover from way back and she had tips and tricks for achieving a magnificent flakey butter crust.  And the sign of a perfectly put together dough, just look at those chunks of butter in there.

The section on rolling out the dough was incredibly enlightening.  I found out that I have been rolling all my dough incorrectly.  This tip will help me in so many facets of baking from pie crusts to biscuits and cookies and back again.

During the thickening course we discussed different pie filling thickeners and how they look, taste and set up.  She demonstrated applying heat and helped me decide that being I am a cake girl at heart I know which thickener I should use in my pie filling.

The course ended with a recipe for the perfect apple pie.  I am elated to say now that I know everything I need to make the Perfect Pie Crust my family will be enjoying this fabulous apple pie.  At long last after years of struggling with the pie crust I have all the answers I need to create my new favorite pie crust for my friends and family’s pies.


I wanted a little southern twist, so I added a pecan crumble topping on my apple pie.  Fabulous!
