Made it for an Easter family gathering and it was quite a hit. Just enough heat to make it interesting and the overall taste was fantastic.

these Enchiladas are delicious, I used 1 can of salsa Verde, and I can of diced tomatoes with Chillis instead, came out great…definitely a keeper.

This makes A LOT! I wanted to cut it in half for my diminished family, so I only cooked 8 oz of elbows, and it still made a ton! Would be an easy, nourishing main dish for a potluck or family get together. I will definitely try different veggies with it next time. Good stomach-warming comfort food.
