This year one of my favorite stores is partnering with the National Pork Board to celebrate national pork month. Costco, which let's face it would be my only store if I had a bigger family and more freezers, has partnered with the National Pork Board with an entire month dedicated to pork. It's 'Porktober'! Costco will be bringing you sales on different cuts of pork all month long.
In honor of this fabulous occasion the National Pork Board has given us the most exciting Porktober Prize Pack to give away to one lucky reader. Included are Costco gift cash for a membership and $100 shopping trip. I could totally use that! Also included are the cutest pig cutting board and soup and sandwich set along with some other fun items.

ReplyDeleteusing heavy foil, drizzle some olive oil on it, place roast in foil, cut up a lot of onions and place around roast. rub roast w golden onion soup mix and sprinkle rest over onions.
drizzle with o oil again and a dab of butter. seal up well so no steam gets out. cook about three hours till tender and crisp around the edges.
set roast aside to rest. put any juices and onions in a pot. add some white wine with a dash of raspberry vinegar. and a little water. a little bit of brown sugar. (not too much as you will add more sweet later) cook that down a bit, add a bit of sage, then add some raspberry jam. whisk well and cook down till it thickens. taste. if too sweet ad a bit more rasp vin. place roast on bed or rice and pour the sauce over the whole thing, garnish w fresh raspberries. even my grand children love this!
