We have been on such a coffee kick since we returned from New Orleans.  I love coffee but in the summer it is just miserable to drink a hot cup of joe.  I’ve spent a lot of time and money at my favorite coffee shop enjoying my favorite iced coffee drinks.  Heck, I buy mocha lattes and frappes and cafe this and that everywhere we go.

After our amazing trip to New Orleans I had a new found love for coffee in every form.  After developing a few frozen coffee drinks and sharing them with you, I new it was time for a coffee popsicle.   I sampled straight coffee ice pops and believe me they were potent, but also very icy and not a favorite.  Mixing the strong brewed coffee with perfect amount of cream and sugar made a scrumptious popsicle with a great consistency.

Ingredients
 

  • 12 ounces strong brewed coffee, room temperature
  • 12 ounces heavy cream
  • 2 tablespoon granulated sugar, to taste

Instructions
 

  • Combine ingredients in a medium bowl. Pour mixture into popsicle molds. Cover with lid or aluminum foil and add sticks. Freeze for 4-24 hours.
  • Enjoy!!!

  1. I wanna make popsicles but have no popsicle moulds. I think I'll make do with glass cups. Tropical flavours all the way for me! But I could use some frozen coffee right about now.

    1. Sounds like a plan, but I would be careful with the glass in the freezer.

    These are awesome! I love popsicles and can’t live without coffee, so this was a no brainer when I saw it. A very tasty and fun way to get your caffeine fix!
