Corn Flake Crusted French Toast

It has been such a crazy few months around here.  Working from home together with a 3 year old is better some days than others.  It's really easy to stay in work mode all the time.  So, Chad and I decided a little family vacay was in order.  Sedona is the perfect location for a family get away, a chance for us to step away from the everyday and appreciate the things that are important.  No schedules, just family fun in the most beautiful place I have ever been.  Peace, serenity and energy make for a fabulous destination.

We stayed at the luxurious Sedona Rouge Hotel and Spa.  It's lovely Mediterranean design had me at the front gate.  The spectacular fountains and sitting areas on the first floor were very welcoming after a 90 minute drive with a 3 year old. We arrived early so I was scoping out the perfect table to wait at, but the staff had us checked in and up to our rooms before I had a chance to cop a squat.

Our room was so spacious, but what really struck me was the great attention to detail.  Don't get me wrong, I love to be pampered as much as the next gal, but give me a place that let's me relax and folds my towels and TP into a fan and I am yours!

After a fun afternoon in Sedona we went up to the observation terrace on the roof overlooking the pool, a perfectly peaceful and serene place to watch the beautiful Sedona sun set.  Even munchkin was in awe.  We enjoyed it so much we went downstairs to Red's Restaurant and ordered a couple of burgers and desserts and had them delivered to the roof so we could enjoy stargazing.  I honestly do not think I have ever seen so many stars.  By the time it was dark, the hotel staff was there lighting the fire pit.  Maybe next time I should bring marshmallows.

The burgers.  Oh My Word!  You have to know we are pretty simple eaters.  Meaning we enjoy the classics; comfort food, grilling and burgers.  Did I mention burgers?  We ordered a Charbroiled Angus Burger off the All Day Menu and each had our choice of fries. Crispy and fabulous sweet potato fries were my choice.  But the burgers were insane!  Simple.  Delicious.  Our kind of food.

The next morning I hit the bathroom to get ready for the day. It is probably bigger than my first apartment.  Complete with a shower so big you could have a party in it and thick and soft Turkish towels, cashmere robes and a full supply of bath products made right in Sedona.  The lemon mint olive oil soap and dual shower heads are just amazing.  What a way to start the day.

We strolled into Red's Restaurant after exploring some of the most beautiful mountains in Sedona that day.  We just missed lunch but were VERY HAPPY to order those burgers again.  Being between lunch and dinner, we had a chance to chat up Chef Ron.  He could very well be the most personable chef I have ever met.  The food was fabulous and they even made macaroni and cheese with broccoli for munchkin, and brought it out before our food was ready.  Triple point score!  She devoured it and declared it 'most tasty'.

The next morning we prepared to check out.  As usual we almost missed breakfast, but got there just in time.  The staff was friendly and attentive.  So, our breakfast of choice?  Pancakes and french toast.  The pancakes were great.  Munchkin really enjoyed them.  The french toast on the other hand was PHENOMINAL!  Perfectly toasted and caramelized on the outside and moist on the inside.  The corn flake crusted french toast was unbelievable.  The jalapeno french toast was unlike anything that we expected.  Both were so amazing we didn't need syrup or butter (a first for us).

We checked out and thanked everyone for a fabulous stay.  They even gave us bottles of water for the road.  How thoughtful!

We got some tips from the chef for better french toast making.   So, when we came home I had to try my hand at my own version of Corn Flake Crusted French Toast.  It is amazing and Chad's new favorite breakfast recipe.  It is perfectly toasted and caramelized with a moist interior.  Creamy sweet french toast dip, as opposed to the usual eggy dip I use.  This was so refreshing and fabulous.  We will definitely be making this again!

Favorite thing about Sedona Rouge Hotel and Spa - The hotel and staff took care of everything.  We could totally and completely relax.  That is exactly what I look for in a fabulous hotel!

Least favorite thing about Sedona Rouge - Leaving.  It was an amazing stay and we didn't want to leave.  Munchkin talked about the hotel the whole way home.  We assured her that we have a trip to Sedona planned for August and we will surely stop in!

Corn Flake Crusted French Toast
serves 4

1 cup heavy cream
½ cup granulated sugar
2 eggs
½ teaspoon cinnamon
2 teaspoons vanilla paste (or vanilla extract)
4 cups corn flakes, crushed
8 slices Texas toast (thick cut plain white bread)
butter, for greasing pan
fresh fruit for serving

In a shallow baking dish combine cream, sugar, eggs, cinnamon, and vanilla.  Combine with a whisk or fork.  Set aside.

In a medium baking dish or shallow bowl add corn flakes.

Turn griddle to high heat.  Butter griddle.  Quickly dip a piece of bread into cream mixture, flip and dip other side.  Place bread into corn flakes and press gently to coat.  Flip and coat the other side.  Place coated bread on griddle and cook until golden brown (approximately 2 minutes).  Flip and cook other side until golden brown.

Repeat until all French toast is cooked.  Serve with fresh fruit.  Enjoy!
