7 Layer Sausage Mexican Bean Dip and Cinco de Mayo Round Up

It's almost Cinco de Mayo and we know you are searching high and low for the perfect party foods.  So, we have gathered our favorites here!  We have dips, salsas, sauces, fajitas, guacamole and a TACO BAR!!!  Also, a new recipe for the old favorite 7 Layer Mexican Bean Dip.

7 Layer Mexican Bean Dip is a favorite at every party we throw!  Featuring, rice, beans, salsa verde, spicy chicken, enchilada sauce and cheese cheese cheese there won't be a drop left, so you better make 2!!!

I have made this 7 Layer Mexican Bean Dip with a few changes.  Try using this recipe too:

7 Layer Sausage Mexican Bean Dip

7 Layer Sausage Mexican Bean Dip
Prep time: 10 MinCook time: 30 MinTotal time: 40 Min


  • 1 pound ground hot Italian chicken sausage
  • drizzle of extra virgin olive oil
  • 1 can refried beans
  • 2 cups Spicy Baked Brown Rice
  • 1 can diced fire roasted green chiles
  • 1/2 cup enchilada sauce
  • 8 oz Mexican cheese blend, shredded
  • 1/2 can large black olives, sliced


  1. Preheat oven to 350 degrees.
  2. In a medium skillet over medium heat drizzle olive oil in warm pan. Add chicken sausage and brown. Remove from pan and place on a paper towel to drain. Set chicken aside until needed.
  3. In a medium casserole dish or heat safe bowl (I used a 1.75 quart). Spread refried beans in an even later.
  4. Add rice and spread evenly. Add diced green chiles and smooth over rice layer. Sprinkle approximately 4 ounces of the cheese onto green chiles layer. Sprinkle cooked sausage evenly over cheese layer.
  5. Add enchilada sauce and smooth evenly over chicken. Sprinkle the remaining cheese over top. Arrange slice olives on top of cheese. Place dish on a small baking sheet and place in center of oven. Bake covered for 30 minutes. Raise oven temp to 400, remove cover and cook until cheese is melted and lightly browned, about 10 minutes.
  6. Serve with chips.

  1. Looks like you have a lot of recipes ready to go for Cinco de Mayo! I love 7 layerd dip, I've never had it with the rice before! my daughter would like it this way!

    1. One day I was making a dip for a party (here in Arizona the standards are chips and salsa at every party). But Chad does not like guac or sour cream. So, I decided to redevelop the concept. Hope your daughter loves it. We usually make 2 and have the left overs (mind you I have to hide the second bowl in the freezer) on tortillas. Even my munchkin loves it. Let us know how your family likes it.

  2. oh wow! LOVE this. I think i'm gonna try the "just north of the border" medium salsa one next week! (already did my grocery shopping this week unfortunately). YUM!

    Also - do you have a recipe for the cilantro yogurt? When I click on it, it just takes me to the picture. Do you think it would be good in a sandwich?

    1. Thank you so much for letting me know. I love the Cilantro Lime Yogurt Sauce on a sandwich. It works great with just about anything you would normally think to use mayo on.
