So, obviously you must be thinking to yourself…  Chicken again???  Yes, I got a great deal on chicken and bought a huge package.  Then I was too tired to split up the package, so it all went into the freezer.  So, when I defrosted it….  Viola!!!  Enough chicken for a week. 

But, this is my last chicken recipe for a while.  I have lots of fun things on the menu for the next week.  Tomorrow is a fantastic pizza that is low calorie.  So, make sure you check back.

So, here we have a fantastic chicken salad served over 100 calories sandwich rounds.   I served it with a Tomato Basil side salad.  It was fabulous!  There is such amazing flavors and textures going on in this sandwich.  The apples and grapes offer a sweet flavor and the celery a huge crunch.  The flavor is smooth and delicious!  I could eat this every day. If you have leftover apples try our apple salad. You can also use up your grapes to make this amazing roasted grapes and sausage recipe.

Ingredients
 

  • 1 tablespoon olive oil
  • 2 tablespoon mayonnaise
  • 2 tablespoons sour cream
  • 3 tablespoons Dijon mustard
  • 1 pound precooked chicken, grilled, baked, rotisserie
  • 1 stalk celery, chopped
  • 16 seedless grapes, halved
  • 1/2 Gala red apple, chopped
  • salt and pepper, to taste

Instructions
 

  • Cut the chicken into bite sized pieces.
  • In a large mixing bowl, whisk together the olive oil, mayo, sour cream, and mustard.
  • Add the chicken, celery, grapes and apple. Toss with forks to combine. Add salt and pepper to taste.
  • Serve on your favorite bread or wrap.

  6. These sound really good! You could add some pecans or almonds for added texture and protein if you would need it!
