Beer, Bacon, and Cheese are pretty much my culinary trifecta! With that said; Beer Bacon Mac and Cheese is the ultimate comfort food. This restaurant quality recipe goes from prep to plate in just 25 minutes and will certainly make the Mac and Cheese Hall of Fame. I dare you to try and eat just one bowl.
This super cheesy mac and cheese starts with thick cut bacon cooked in a skillet and a magical cheese sauce is created out of the bacon drippings. Your favorite beer is cooked right into the mixture and a mixture of smoky spices are added in. The cooked beer imparts a very distinctive taste that you can not get with any other ingredient. These flavors result in a restaurant quality mac and cheese unlike anything that you have had before. It's ready in less than half an hour.

It is the cool season around here. We are dipping in the 70's in Arizona and that means SOUP! I have to tell you we have made a ton of soup already and I do not see any stopping in the near future. So keep your eyes peeled we have a new soup planned each week throughout the cool season and they will knock your socks off.
One of our new soups this season has kind of gone crazy around here. The Bacon Cheddar Beer Cheese Soup with Chicken has over 23,000 Pins and is already our #2 all time recipe on the site and it was just posted 4 weeks ago. We have had such a fantastic response to the recipe with rave reviews all over Facebook and our site. We have even eaten it a gazillion times so I decided to mix it up a bit.

Check out our new beer cheese soup: Bacon Double Cheeseburger Beer Cheese Soup
Sometimes I am brilliant on the fly. You know what I mean, you are rushed for dinner and you start pulling things out of your fridge and pantry and create the most spectacular dinner ever. Other nights you get stuck in one mindset. OK, I have chicken and need to make soup. Hmmm.... Chicken noodle soup. Luckily this week Chad was incredibly inspiring.
I told him I needed a soup made with chicken. We threw some ideas around and then he said: bacon, chicken cheese. OH YAY! I got that.

The smell of spring in the air had me whipping off my grill cover and dusting off my grill this weekend. Chad has been talking about having a fine steakhouse burger all week. When I say he has been talking about it, I mean it! "Goodnight baby." "So, what do you think about having burgers tomorrow". Really?

A fabulous meat and potatoes skillet made especially for my Iowa bred husband. A man's meal that I fell head over heals in love with. Seriously it is amazingly sweet and savory with a special ingredient that makes this dish ahhhh-mazing!

The unseasonably cool weather has me back in a comfort food mood. Meat and potatoes are exactly what I am looking for. But not just any meat and potatoes. How about a thick and rich pork stew? As per usual I have about 30 minutes to get dinner on the table.

A few weeks ago I made Chad the most carnivorous chili I could have
dreamt (seriously that is a word in Florida. Spell check really needs a regional button.) dreamed up. He actually reviewed it as "stupid good". Like as is so good, he couldn't come up with the words (that must be an Iowa thing). I guess that was quite the compliment! So, that being said... With so much going on in our lives that revolves around the health of our loved ones, I have really been focused on eating healthy.

Are you looking for the perfect side dish? I have been dreaming of a side dish so insanely divine that I would need to build a meal around it. Loaded with bacon, beer and cheese I am pretty sure this is it!!! Even though I am not a big beer drinker (I would much rather sip on one of our Classic Margaritas) I really love the flavor beer gives to a dish when cooked with it.

This is the most amazing cheese sauce you will ever sink your teeth into. Beer and cheddar cheese perfectly combine with the smoked paprika and ground chile de arbol to create a rich, smoky deep cheddar cheese flavor that you just can not get enough of!

ARE YOU READY FOR THIS? Welcome to the smokehouse, Slow Roasters. Today, we will be checking your inhibitions at the door, this burger is packed full of bravado. This is THE burger to wake up your taste buds! From the smokehouse flavors to the bacon and bbq sauce, flowing all the way down the river of beer cheese. This burger will have your mouth watering at first sight and your taste buds dancing with pure delight!
I was looking for the ultimate grilling creation to make for Chad (it is his birthday this week). I knew it had to be bold and passionate (like me). It had to be big, flavorful and loaded with cheese and bacon. I knew a burger would be perfect for this occasion. I have to search for the exact words to describe this burger... Maybe love. Can you feel love for a burger? Well if you can this is the burger. Chad looked like a kid on Christmas morning when he saw this burger. Once he took his first bite, his eyes rolled back in his head and the air was filled with mmmmm's. I love that sound! Needless to say this burger is a member of the clean plate club. Not even a drip of cheese was left on the plate. He licked it clean!
Did you take a REALLY GOOD LOOK at this tantalizing burger??? Go ahead, I'll wait. 8 ounces of ground chuck perfectly spiced with chipotle chile pepper. It is served over a bed of sweet and spicy TSRI's Signature Barbecue Sauce. A heaping scoop of luscious Beer Cheddar Cheese Sauce is poured over top, with 4 bacon strips all on a toasted ciabatta roll. This is the definition of burger heaven. Purely decadent and delicious. Chad has requested this for his birthday dinner too.
We are also excited to share with you our Anniversary Celebration Giveaway for this week... TSRI is having a 4 month grilling celebration, so what would be better than an amazing grilling giveaway to Celebrate our 1 year Anniversary? This will get all you Slow Roasters out on the patio and grilling your own summer treats! Check it our after the recipe!

It is barbeque season already and we are in the midst of TSRI's Summer Grilling Celebration! We are bringing you our favorite summer specialties. I have been enjoying learning how to cook on the big gas grill. It made perfect sense. I am the cook. Why wouldn't I also be the grill master?
I have also been having a lot of fun developing marinades for grilling. Most recently I created Lemon Rosemary Marinade and Garlic Beer Marinade for Grilled Chicken.
After enjoying Beer and Garlic Marinaded Chicken at my friend Mary's house several times, I decided to develop a garlic beer marinade myself. I started with the garlic and the beer. I chose Black Toad, which boast a deep nutty flavor. I am not a beer connoisseur, but this sounded promising (I was right). I have to tell you though, this does not taste like beer just a deliciously flavorful marinade (I am not a big beer fan, I don't like anything stronger than Bud Light. Don't judge! It just is).

I have been playing with some bread recipes lately and have fallen in love with the simplicity of beer bread. They are a bit more dense, but can be mixed with a spoon, there is no kneading and no rise time. That is a perfect option for times when you don't have 3 hours to make bread.
