What's Sizzling on TSRI This Week?  Our hottest recipes! Where else to find us! What we are up to! It has been a really crazy awesome week. We spent last week in Houston and had an amazing time. To make the trip even more fun, we decided to do a Best of Houston tour and we literally ate our way through

the best restaurants in Houston! We missed a lot too, so Munchkin is planning a part 2 already. I had some of the best food I have ever eaten and I totally had my fill of margaritas (is that possible?). We will be sharing our favorites soon so keep an eye out for that. I spent some time embracing my inner cowgirl too. I think I can rock a cowboy hat, right? Check out the picture down the page under Sizzling Fun to catch that photo.

We came home just in time to start my birthday month. We have a few fun things planned with family and friends. And then we are heading to Disney to officially celebrate my birthday at Mickeys-Not-So-Scary-Halloween-Party. I am so excited and can not wait to get there.

I want to get costumes for the 3 of us in a fun theme, but I am at a loss. Munchkin suggested Toy Story. She wants to be Jessie and have Chad and I dress up as Mr and Mrs Potato head.  LOL. How would I even do that?

Italian Herb Baked Meatballs are our family's favorite meatballs. They are loaded with fresh herbs and cheese. They are bursting with flavor.  You can make pasta sauce, but there is truly no need. They are the best daggum meatballs ever!  No sauce required. Simple recipe, magnificent meatballs!

The Best Ever Pecan Pie Bars are so good people offer to pay me for them.  A fabulous recipe with a caramelized pecan pie set atop a shortbread crust is the absolute perfect nut bar.  My family requests more of this dessert than any other every year.

2-Ingredient Coconut Macaroons are perfectly sweet, beautifully toasted on the outside and moist and chewy on the inside. With this lazy day recipe, I must have eaten about 20 and made another batch to take on our road trip. They are absolutely perfect for the coconut lover!

Perfect Peach Cobbler Dump Cake is a very easy recipe made in one bowl, poured into a pan and canned peaches are poured over top.  It doesn't get much easier than that.  Well my four year old did most of the work and that is a simple cake.

This week is my birthday and Chad took me to On The Border for dinner on my birthday. I love a casual dinner on the patio and the weather was just perfect. I enjoy happy hour there. I order a margarita and kick back with something from the happy hour menu rather than filling up on a huge meal. What? Did you think I was serious about having my fill of margaritas? LOL. I have a thing for those fully loaded Cantina Nachos and I am working on a copycat recipe. Just because they are just too tasty not to. 

A few nights ago we attended an awesome event with Negra Modelo in Scottsdale and chatted with Chef Rick Bayless from the PBS series Mexico: One Plate at a Time. Yes, I chatted with him. We watched a cooking demonstration and ate poached salmon and lamb barcacoa. I got some really great cooking tips and Chad got spectacular photos. Chad and I both loved all the food. Seriously. I loved fish. I will chat more about that with you next week. It was a fantastic night filled with fabulous food, excellent cerveza and great company. It's a tough job, but someone has to do it.

Well that is about what we are up to this week. I can't keep my hand out of this Cheesy Chicken Enchilada Skillet. You really should try it!
