Cantaloupe and Cream Lime Ice Pops

Cantaloupe and Cream Lime Ice Pops are a rich and creamy pop loaded with that cantaloupe flavor with hints of lime to wake it up!

Sometimes a summer produce sale is the next best thing to heaven.  While I was out grocery shopping last week I found my store had cantaloupe for 50 cents each, so of course all of a sudden I desperately needed cantaloupe.

After taking them home, my picky toddler took a stand against trying the cantaloupe.  So, sometimes you pick your battles and sometimes you formulate a better battle plan.  I opted for the latter.  Ice pops it is.  I have mentioned before that ice pops are our ‘no fail’ fall back when Munchkin won’t eat anything else.  Those are usually packed them with yogurt.  However, yogurt is not a great companion for cantaloupe in an ice pop.  So, I needed something thick rich and creamy.  Heavy cream won out!

I mixed in heavy cream and some honey to sweeten it up.  Then added lime to compliment to cantaloupe flavor.  This ice pop is every cantaloupe lovers dream come true.  A rich and creamy pop loaded with that cantaloupe flavor with hints of lime to wake it up!

Ingredients
 

  • 1 cantaloupe, halved, seeded and cut into chunks
  • 1/2 cup heavy cream
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest

Instructions
 

  • Combine ingredients in a blender. Blend until completely smooth. Pour cantaloupe mixture into ice pop molds and freeze according to manufacturers instructions. Usually 4-24 hours.

  2. Fifty cents each. You lucky girl! I have to get some Popsicle molds. This is getting out of control! I need an orange creamsicle at least once this summer. And I get the impression you live somewhere close to Mary. You better hurry over and get some of that salmon soon!

    1. Tricia, we live about 5 miles apart. (My salmon is safe though, because my girl, Donna, does not touch seafood.) If you weren't 2000+ miles away, I would happily share with you!!

  5. Love your recipe. I added 1 TAB of blue agave syrup too, as popsicles need a little syrup so they aren't rock-hard like ice. Also a pinch of sea salt. THANKS SO MUCH!!
