Broccoli Cheddar Turkey Egg Bowl

I love starting the day with a hearty high protein breakfast. As I am not a morning person, make ahead breakfasts are certainly my thing. I love eggs for their nutritional value. I really enjoy this recipe for all of the possibilities. The variations are endless. These egg bowls reheat so perfectly I can make a bunch on Sunday and just reheat them all week long.

This Broccoli Cheddar Turkey Egg Bowl meets all the criteria for excellent nutrition, incredible flavor, and ease of preparation.  Prepared with frozen broccoli florets, defrosted, these are quick to make and quick to disappear.

I put these in the microwave for 60 seconds with a plate on top of the bowl, and they reheat perfectly.  Add a glass of orange juice and you have a well-balanced breakfast and powerful start to your day!

Broccoli Cheddar Turkey Egg Bowl

Ingredients
 

  • 16 large egg whites
  • 4 cups frozen broccoli florets, defrosted
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 16 slices deli turkey
  • non-stick olive oil spray
  • 1 cup shredded Colby jack cheese

Instructions
 

  • Preheat oven to 400°F. Place 4 small (2-cup) oven safe bowls on a baking sheet and completely coat the inside of each bowl with non-stick cooking spray. Set aside.
  • Place 4 slices of turkey in each bowl, overlapping to make a bowl. Each slice will extend above the bowl slightly.
  • In a medium sized mixing bowl combine egg whites, salt, pepper and garlic powder. Whisk until well incorporated.
  • Add 1 cup of broccoli to each cup, on top of the turkey. Pour 1/4 of the egg mixture into each bowl.
  • Place baking sheet in the center of the oven and bake for 22 minutes until center is set (not jiggly).
  • Remove from oven and add 1/4 cup cheese to the top of each egg bowl. Return to oven and bake for 5 minutes or until cheese is melted.
  • You can remove the Broccoli Cheddar Turkey Egg Bowl from the glass bowl and serve on a plate or eat it right inside the bowl it was cooked in.
  • Serve and enjoy!

ou can substitute 1 whole egg for every 2 egg whites that you wish to swap out.

    1. Tricia, I have been thinking the same thing each time I make them. Different substitutions, flavors, ingredients. I love baked eggs (I love make ahead anything) and these are awesome.

    1. I agree, I would rather use the whole egg and not being a big fan of turkey might use ham instead. There's a lot you can add and subtract from this recipe. Look forward to trying it. Thanks!

  4. Reheat them in your oven. It only takes a couple of minutes, and is much better. Microwave ovens kill the good enzymes in your food.

  5. Does the egg hold the turkey bowl together, so it stays together if you take it out of the bowl? I want to try this in my silicone baking cups.

    1. Yes, the egg holds it all together. It would work in any oven safe baking dish. Enjoy and let us know how it goes.
