Welcome to another edition of Simply Delicious on this terrific Tuesday here at The Slow Roasted Italian. Today we are featuring this amazing blend of flavors in this out of the ordinary chicken salad sandwich.  As we are doing our best to enjoy our favorite foods in the most healthy flavorful way possible I have designed this chicken salad to meet the criteria of my favorite chicken salad recipe; it has a lot of flavor (), it is creamy (), it’s got great crunch () and it is filling ().

This very well may be my new favorite chicken salad recipe.  I love this so much I had it for breakfast.  Seriously!

Cashew Curry Grilled Chicken Salad Sandwich

Ingredients
 

  • 1/2 cup Greek yogurt, plain non-fat (I used Fage)
  • 2 tablespoons light sour cream
  • 3/4 teaspoon curry powder
  • 1 teaspoon kosher salt, to taste
  • 1/2 teaspoon pepper
  • 12 ounces Essential Grilled Chicken, 1/4-1/2″ dice (about 1 pound pre-cook weight)
  • 3/4 cup celery, 1/4-1/2″ dice
  • 2 tablespoons scallions, sliced
  • 1/4 cup roasted unsalted cashews, chopped
  • juice of 1 lime, more to taste
  • 4 whole wheat 100 calorie thin hamburger buns, I used Sara Lee

Instructions
 

  • In a medium bowl combine yogurt, sour cream, curry powder, salt and pepper. Whisk well to combine.
  • Add chicken, celery, scallions, cashews and lime juice. Stir well until all ingredients are evenly coated. If it seems too dry you can add more lime juice.
  • Divide into 4 equal portions (approximately 5 ounces each) and scoop onto buns. Serve immediately.

Donna’s Notes

You can also make this the day before and allow the flavors to meld. It tastes heavenly the next day!

  2. This looks great. I adore chicken salad and my very favorite one has cashews in it as well. The cabbage salad is so pretty and colorful next to it as well.

  4. Holy protein! I love a good curried chicken salad and I actually have some cashews from a tin of nuts and chocolate I got at Christmas.

  5. I finally got around to making this last night. Delicious! I was very tempted to have it for breakfast, too. ; )
